Grilled Vegetables


  • 2 big or 4 small aubergines
  • 3 courgettes
  • 2 potatoes
  • 2 peppers
  • 5-6 pleurotus mushrooms
  • 1 tomato
  • 1 onion
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 tsp oregano
  • some rosemary, balsamic vinegar, salt

Wash the vegetables and slice them. Finely slice the carrots as they need more time to cook. Put all the vegetables a tray. Add the oregano, rosemary, salt, oil, grated garlic and mix. Let them absorb the flavours of the herbs and garlic and then grill them until they soften and get a lovely golden colour. Sprinkle some vinegar over the vegetables.
