Beetroots with rocket


  • 4-5 beetroots
  • 2 apples
  • 5-6 spring onions
  • 1 handful rocket
  • 1 small lettuce
  • 1/2 cup balsamic vinegar
  • 1/2 cup olive oil
  • juice from one orange
  • 1 tbsp honey
  • peppermint, salt, pepper

Clean the beetroots and wrap them in tinfoil. Roast them for about an hour in 180° C. Then peel them and slice them. Also, slice the apples, chop the onions and shred the lettuce and rocket. In a glass bowl, put a layer of lettuce, rocket and onion. Then a layer of beetroots and the apples on top. Mix the vinegar, orange juice, honey and olive oil to make the dressing. Add it to the salad. Finally, sprinkle some peppermint over it.
